The order is calculated using the animals \u003cstrong\u003edressed weight. \u003c\/strong\u003eThe dressed weight is the weight of the carcass after processing, but before it is aged and broken down (this includes bones, fat and any trims that are later removed). Therefore importantly the dressed weight is not the weight of the beef that you will take home.\u003c\/p\u003e\n\u003cp\u003eThe beef is calculated on \u003cstrong\u003e$18.50\/kg\u003c\/strong\u003e.
